± 1kg Couta fillets

Basting/marinade sauce:

½ Teaspoons of salt
½ Teaspoons of parsley
½ Teaspoons of Origanum
6 drops of Tabasco sauce
200ml melted Butro
150ml of apricot jam
50ml Olive oil
75ml of fresh lemon juice

Melt the Butro, Tabasco, garlic, olive oil and apricot jam together in a microwave oven, then mix all the other ingredients together.
Place the fish (defrosted) in a sealable container and pour the marinade over it, shake well and place in the fridge of around 8 hours.
Braai to taste over a medium to low heat open fire using the marinade as a basting sauce on both sides as well during the braai.
